"Plummet" and "plunge" generally mean the same thing. They both generally refer to something (in this case, the market) taking a sharp nosedive.
"Rose" ("Rise") generally means to increase.
"Soar" means to increase greatly and (for the most part) stay there.
"Rally" generally refers to a market increase that takes place on the news or the forecast of something good happening or something beneficial to investors.
"Surge" just refers to a sudden, sharp increase, like an electrical surge.
